Reducing sugar:Carbohydrates with a free aldehyde or free ketone groups are present. These types of sugars are known as reducing sugars.

These compounds are in hemiacetal or hemiketal forms.

These reducing sugars are exhibit mutarotation.

These compounds are form osazone with phenyl hydrazine.

The reducing sugars form oximes with hydroxylamine.

Examples: Glucose, Fructose, lactose, maltose and Cellobiose.

Non-reducingsugar:

In these compounds the aldehyde and ketone are not available in free form.

These compounds are in acetal or ketal forms.

These reducing sugars are not exhibit mutarotation.

These compounds are not form osazone with phenyl hydrazine.

The non-reducing sugars not form oximes with hydroxylamine.

Examples: Sucrose, Glycogen and inulin.
